Assuming you only own a PC then Tales of Berseria is the best place to start. People will argue that this game is lacking compared to other Tales game. Even though Berseria is a prequel you will notice the references and appreciate them more if you play Zesteria first. Not to say the rating is entirely unwarranted but now differing opinions start to make headway into the games critique for most.
Berseria is a really strong entry on most fronts and its a real good place to start. That is the reason you should start with this. There arent many titles in the series that stray too far outside the mold so you could start with just about any one and get a general idea of what the rest will be like.
Symphonia chronicles is a bit weird and not quite like a regular Tales game and also technically a sequel. Its where a lot of people started the series when it was on the Gamecube its an all-around good JRPG and a pretty decent example of what most Tales games are like. This is a very good game and if viewed on its own it is an excellent Action-Based RPG that is a little lacking on post-game content.
The claims of many rehashed concepts and the game not trying anything new to shake up the Souls formula are well-known by this point. I would start with Symphonia since I think its the worst in the series yet its still not a bad game. Compared to OTHER Tales games it lacks content often found within the series.

Vesperia was released first. Symphonia Abyss and then Vesperia. It has some really good characters near the end but the starting characters are mostly either annoying or boring the story feels like a bad rip-off of Final Fantasy X for the first twenty hours and only after that do the good characters start to join.
Ive been told that Abyss Symphonia and Vesperia are the best Tales games but I am kind of interested in Eternia. As mentioned above SymphoniaAbyssVesperia are generally viewed as the top three and personally I. I would recommend either Vesperia for Xbox360 or Abyss for the 3DS but Im also biased towards Abyss.

Abyss is my favourite one but It depends on what you like more if you want a more gameplay focused game I would say go for Xillia or maybe Vesperia if you want a more story driven game go for Symphonia or Abyss. Because the side quests in the game have humongous worldlorecharacter relevance.
It has held up remarkably well though be forewarned the game does not have any kind of logs for miss-able steps for any side quest so youll want a side quest guide handy. Xillia and Xillia 2 are pretty cool. Really Id just say go for the best and get Berseria.
